Preheat oven to 325*F . Line an 8 inch square baking dish with parchment paper.
In a measuring glass or microwave safe bowl combine oil and 1/2 cup chocolate chips. Microwave for 5 second intervals after each take out and stir the contents of the bowl or measuring cup until completely melted. Next add the cocoa powder, coffee granules and 2 teaspoons of hot water. Whisk until well combined then set aside until ready to use.
Add to a large mixing bowl both granulated sugar and firmly packed brown sugar. Now add the oil with the chocolate and coffee to the mixing bowl and stir until well combined.
Next, add 1 egg at a time and whisk after each one.
Now fold in 1/2 cup of the all purpose flour into the batter. Mix until almost combined. Now fold in the other half of the flour. Keep folding the flour in until the flour is combined. Next fold 1/2 cup of chocolate chips.
DON'T Over mix the batter!! Add the batter to the parchment lined baking dish and bake for 55 minutes to 60 minutes. Insert toothpick if it comes out clean the brownies are done.
